Since my childhood, I always savored a kind of cookies from an ancient recipe. These melting little cookies are associated in my mind with a lot of memories that go back in time. My grandmother Téta Renée prepared the first ones I tasted.
As a little girl Téta Renée was in a boarding school in Baabdat where she spent all her youth. During her days off, she went to her uncle who lived in Heneine Palace in Beirut. From the kitchen of this small palace regularly emerged mouthwatering smells. It was Zahya, the cook, who was always busy preparing all kinds of dishes and delicious desserts. Téta Renée was attracted by the smell of dishes simmering and desserts baking in the oven. One of Zahya's recipes was preparing the famous Cookies that have been the delight of my childhood. Téta Renée, who always tasted them right out of the oven, ended up learning the recipe. Her eldest daughter Téta Chams, my mother, in turn, learned to prepare them.
After spending many years abroad I decided to go back to Lebanon to share the taste of these Cookies with as many people as possible.
